A native of Dublin, Ireland, Kevin found his calling at an early age and he enrolled in the Dublin Institute of Technology studying Culinary Arts. From there he was offered a position at the renowned Restaurant Patrick Guilbaud; which was Ireland’s only two Michelin-starred restaurant at that time. Under the guidance of head chefs Guillaume Lebrun and Kieran Glennon, Kevin developed a passion for French cooking and an appreciation of the importance of high quality produce. His culinary journey then took him to London, where he took on the position of sous chef at Jason Atherton’s Michelin-starred Pollen Street Social. In search of a new and exciting challenge, Kevin joined Jun Tanaka’s newly opened restaurant, The Ninth, in 2015, as Head Chef. Within the first year they gained a Michelin star.
Kevin returned to Dublin in 2019 and worked alongside the Allta team. Kevin opened Library Street in November 2021.

William Gnudi is Library St's first head chef. Hailing from Bologna, Italy, here his lifelong love and passion for food and nature began. He has worked with an uncompromising devotion to his craft, training in some of the most celebrated kitchens in the world including 3 star Enoteca Pinchiorri and Restaurante NADO.
He's been with Library St since the very beginning, applying for the position in October 2021. An integral part of the kitchen, William is known for his calm and harmonious approach to cooking alongside his team. A reliable and adored presence in the kitchen.

Restaurant manager Laoise Dempsey is a Galway born Sommelier. Certified with a WSET Level 3 and has a broad range of industry experience. She curates wine lists that showcase her international travels and celebrates diverse and broad wine making traditions. Laoise takes a personal interest in mentoring her team and fostering a deeper appreciation for wine through education and practice, to keep learning thriving within hospitality.
Laoise is passionate about customer service, believing that building real connections with guests is the foundation of a great restaurant experience, and that Library St should be an inclusive experience that's accessible to everyone.
